To make this into one of the low carb / keto desserts, that is also sugar free (I use monk fruit based sweetener ground to a confectionery powder), and gluten free, I made a keto gingerbread crumb crust, a sugar free caramel, stabilized whipped cream frosting and used a few leftover sugar free gingerbread people for cake decorating.
