The cashews make an incredibly creamy and silky, but light tasting, substitute for dairy cream cheese. The cashews cream cheese is further enhanced with the fresh lime juice, while the pie crust incorporates cocoa, coconut cream, and nut flours, and either the hemp protein powder or pea protein powder, to create a rich satisfying taste that does not overpower the fresh flavor of the cheesecake filling.
