A tasty keto breakfast recipe eggroll omelet that is easy to make and uses cooked ham, eggs, sushi nori and seasonings to create a keto ham eggroll kimbap / gimbap. This Korean keto recipe is a filling breakfast that you can also take with you as an on the go breakfast and enjoy at any time of day, so you can do intermittent fasting successfully. This keto recipe uses both eggs and ham in a creative way and, best of all, these keto eggrolls are a good part of a gluten free breakfast recipe, a sugar free recipe and prep ahead breakfast. As with my recipes, I use whole food, and subscribe to a clean eating protocol that is great for weight loss, Atkins diet, Banting diet, paleo diet, diabetic diet, celiac diet, and many other specific diet needs, while also being a great healthy alternative for everyone who wants to improve their health, not just for those of us specifically embracing the keto lifestyle. A link to the video from which I adapted this recipe is posted in the FYI below.
Gimbap or Kimbap is the most popular picnic and lunch food in Korea. Gimbap is generically referred to as Korean Sushi but although they have some common ingredients, the Korean Gimbap has its own unique flavor. This video is a detailed explanation of how to convert simple oven backed cauli rice into the delicious ingredient which distinguishes this tasty recipe.
Gimbap has only a few required ingredients but the rest of what you use as fillings is up to you. There are no set rules, especially with modern versions of gimbap, so have fun and make your own original creation. Enjoy!
