2. Cut each boneless, skinless chicken breast into two equal parts
3. Make a slit in the middle of the thickest part of the breast to form a pocket. For the thinner side, if you cannot make a pocket, butterfly cut the section
4. Put one cube of cheese into the open pocket of the chicken breast or wrap the cheese with the butterfly cut section of that half chicken breast
5. Use three strips of bacon to wrap the chicken. First wrap the opening by wrapping the bacon around the width of the bundle to seal the opening. Wrap the second strip of bacon around the length and wrap the third piece on a diagonal to make sure the meat is completely covered
6. Place bundles on a parchment lined baking pan and bake for about 20 – 30 minutes
7. If not applying BBQ sauce raise oven temp to 220 C or 430 F and keep baking, turning to crisp the bacon on both top and bottom
8. If applying BBQ sauce, remove the pan from oven and coat the entire bundle with half a tablespoon of the Habanero BBQ sauce. Raise the temperature to 220 C or 430 F and place the pan back into the oven and bake for 10 – 15 minutes until the bacon is crispy and the chicken is done. The total time will depend on the thickness of each half of the chicken breast
9. Remove from oven and let rest for 5 to 10 minutes before serving
The BBQ Chicken bundles are a great prepare-ahead meal; make them the night before and bake or BBQ the next day. Alternatively, make ahead and enjoy them as a cold entree at a picnic.
If you make extra, place uncooked bundles in freezer bags and put into the freezer until needed. Take out the night before and let the BBQ Chicken Bundles thaw in the refrigerator overnight. Using a microwave to defrost would make the chicken rubbery.
