1. Follow Directions in Ultimate Keto Burger recipe as written, but make a double batch
2. Follow and make my Keto Buns as directed. You will only need 6 buns
3. Choose the type of cheese you want and cut into 6 strips (20 g per burger)
4. For each burger, weigh exactly 170 g (6 oz) of prepared ultimate burger. Divide each burger into 2 equal parts. Roll lightly into a ball, flatten into a puck shape
5. Place each 85 g (3 oz) flattened ball on a surface lined with a sheet of clingwrap. Starting at the center, gently press to shape a hollow with a ridge on the perimeter
6. Place the 20 g (0.7 oz) of cheese in the center of the first patty. Placing your hand under the cling wrap, use the cling wrap to place the second 3 oz patty over the one with the cheese. Try to match edges exactly
7. Pinch and shape the perimeter of the two patties. Seal well so that the cheese will not leak
8. Heat a skillet or frying pan on medium heat. When pan is hot, brush with 1 tbsp of grapeseed oil, bacon fat, or coconut oil
9. Place patties in the pan, leave plenty of room between the patties. Grill each side, flipping only once
10. Frying time will vary. As a guide, for a 175 g (6 oz) Ultimate Keto Juicy Lucy Hamburger: Medium rare – 4 minutes per side; for medium 5 minutes per side. 5 minutes per side is recommended for best results. Adjust time as needed
11. Remove the hamburgers from the skillet and let rest for 5 minutes to lock in juices
12. Classic Juicy Lucy is served on a bun with only mayonnaise. Enjoy
