1. Prepare the cauliflower rice by either using the large holes of a box grater or your food processor. If using a food processor also add the garlic cloves when grinding the cauliflower florets. If not, grate the garlic and combine with box grater. Set aside. Fresh is best, but you could use frozen
2. Heat a skillet over medium heat and then add the oil. When the oil is hot, drop in the onions and diced jalapeno peppers. Sauté for about 5 minutes until the onions are translucent, tossing occasionally. Add the cauliflower rice and garlic to the pot. Toss well and cook for 5-8 minutes. Cooking time will depend on how soft you want the cauliflower rice. Toss occasionally as the cauliflower rice is cooking
3. While everything is cooking, remove the ripe avocado from the shell and mash with a fork. Pour the lime juice into the bowl and add the chopped cilantro, salt and pepper. Stir to combine
4. When the cauliflower rice mixture is cooked to your liking, remove from heat and let cool to room temperature or just slightly warm. Toss in the avocado mixture and fold until very well combined. Garnish and serve. Enjoy!
