1. Into a small mixing bowl add all the dry ingredients and stir until well combined. Store in a glass airtight spice container
2. Into a small mixing bowl add all the ingredients: the Smoky Chipotle Dry Rub, tomato paste, water, apple cider vinegar, and Worcestershire Sauce
3. Stir well until a smooth creamy paste forms. The mixture may be a bit runny at this point
4. Transfer into a small pot and place on medium low setting of your stovetop. Bring to a light simmer. Reduce heat to low and simmer very gently for about 20 minutes. Set aside and let cool for at least 30 minutes to allow flavors to combine. Stir before using each time
5. Store in an airtight glass container and keep in the refrigerator. Will keep for a couple of months if stored properly. Enjoy!
In case you are wondering what exactly is a chipotle, I had no idea before I started maxing Mexican/Spanish and Tex-Mex recipes, a chipotle is a smoked dried ripe jalapeno chili prepper. This Chipotle can be bought in a jar with adobe oil or as a ground up powder as the one we are using in this recipe. It has a rich flavorful and strong and moderately hot taste. Use sparingly as a little goes a long way to enhance any recipe.
