1. Wash and pat dry the strawberries. Cut off the green tops and rough cut. Put the strawberries into a food processor or blender and puree
2. Transfer the fruit puree to a small sauce pan. Add the lemon zest, lemon juice and the salt. If desired, add the sweetener – but do NOT add too much
3. Cook at a simmer over medium low to low heat for about 20 minutes or until the water content of the puree has reduced and the puree looks much thicker
4. Transfer to a glass container and let cool. Jam will thicken as it cools. Enjoy!
